BUT, i find my variation below is way easier:
Ingredients:
╰ 430g / 3 loosely scooped cups of flour (and additional for surfaces/hands)
╰ 1/4-1/2 tsp of salt (or use more if you want slightly more salty oomph)
╰ 1/4 tsp active or instant yeast
╰ 1.5 cups of water (lukewarm if using active yeast)
Required equipment:
╰ Dutch oven OR some sort of covered cooking vessel that is oven-safe to 450 degrees f (~232 deg C) -- if you do not have something that can work, you can use a deeper pan and cover it with aluminum: (cheap), (expensive)
╰ Large mixing bowl
╰ Measuring cups and spoons
╰ Mixing spoon (I like silicone spatulas)
╰ Kitchen towel or some sort of breathable fabric
Optional equipment:
╰ Digital scale (inexpensive and worth it!):
╰ Silicone mat:
Directions:
╰ Mix flour and salt with active / instant yeast (dissolved in lukewarm water) until fully mixed in a large mixing bowl with room. Dough is wet and shaggy at this stage
╰ Let sit covered for 12-18 hours (or more!) on your counter
╰ 12-18 hours, the dough will have doubled in size and surface will look bubbly
╰ Dump out onto a floured surface (I prefer onto a silicone mat)
╰ With your hands floured, take the dough and gently work it into a ball shape by tucking the straggly ends under
╰ Cover loosely with kitchen towel and let sit for. ~2 more hours
╰ Fully preheat your oven to 450 degrees f with your pot inside (including the lid!)
╰ Flour your hands, take the dough, and transfer into your pre-heated pot upside down (it will look ugly, but don't worry)
╰ Bake covered for ~30min
╰ Remove lid and bake uncovered for ~13-15 more min
╰ Remove from oven and let bread cool for at least 15 minutes
╰ EAT. IT WILL BE AMAZING.
